The perfect way to make use of a leftover chicken…

What you’ll need
Leftover chicken carcass
Celery tops
One halved onion
Carrot halved
Handful of parsley
Salt and pepper

Method
1) Put veg and chicken in pot
2) Cover with water and teaspoon of salt and pepper
3) Bring to boil and reduce to simmer
4) Cover and leave for 4 hour, removing any foam that rises to the surface
5) Remove bones and chicken with slotted spoon and pass liquid through a seive
